The most special Chivite Collection

"In Chivite we remember Denis Dubourdieu every time we uncork one of our Collections, and because of that," affirms Julián Chivite, "we wanted to pay him a small tribute". The 2015 vintage of the Chivite Colección Blanco, the last that he sold, has become the recognition that testifies to the admiration for his work and the gratitude for the love he put into each of the bottles he made in the Chivite house.

Dubourdieu, began the working relationship with Chivite in 1993. Professor of Oenology at the Faculty of Oenology of the University of Bordeaux and general director of the Institute of Sciences of Vine and Wine of the same university, Denis Dubourdieu has been a referent in the scientific world, where his works on wine aromas, vinification and yeasts stood out. In addition to numerous scientific distinctions, he was Knight of the Order of Agricultural Merit of the Government of France and Legion of Honor. He managed his family properties and, as an oenologist, advised prestigious wineries such as Château d'Yquem or Château Cheval Blanc

His successor and collaborator since 2012, César Muñoz, recalls how Denis had a true passion for Chardonnay, a variety that, he claimed, had found in the Finca de Legardeta a unique redoubt, with climatic conditions and perfect soils to obtain typicity , complexity and great aging capacity. In Legardeta, with the influence of the continental-continental climate, the Chardonnay ripens at its own pace, slowly and gently maintaining good levels of acidity, pH and aromatic potential, finally showing freshness and expressivity.

Chivite Colección Blanco 2015 is made with the Chardonnay variety. After eleven months in French oak barrels it shows a pale green, bright yellow color. Its aroma is intense and complex and it is very elegant on the palate, soft, fatty, very tasty and fresh. (RRP € 55 / 75cl).
